There are tons of homemade mayo recipes on the internet.  Most ask you to take the ingredients to room temperature before blending, and some give very specific instructions for how to add the ingredients to a blender or food processor to achieve that perfect fluffy texture.

The Easiest Homemade Mayo Recipe Ever

I'm sure those recipes are awesome!  But I've found a shortcut — the immersion blender or "stick blender".  Seriously, all you need to do is dump all of your ingredients into a container, and whip with the stick blender.

Obv, this homemade mayonnaise recipe calls for raw eggs, so if you're not ok with that, you can pick up pasteurized eggs instead.  Pasteurized eggs have been, well, pasteurized to kill any lingering salmonella bacteria from commercially produced eggs.  Also, if you purchase free range organic eggs, you have a much lower risk of getting salmonella poisoning.

Basically, consume at your own risk.  And if you want to learn more about the risks (or lack thereof) of consuming raw eggs, this article from farmersalmanac.com does a great job of explaining them.

  1. Add all ingredients to immersion blender cup or container of your choice.
  2. Insert immersion blender, settling it on the bottom of the container.
  3. Turn immersion blender on. You may need to raise it a tiny bit to incorporate all of the oil.
  4. The oil and egg will mix together to form a creamy, delicious mayonnaise. Once it's of a consistent texture, you can turn off the blender.
  5. Using a rubber scraper, put the mayonnaise in an airtight container. Refrigerate promptly.

  • This recipe contains raw eggs. If you're uncomfortable consuming raw eggs, you can purchase pasteurized eggs. See this article from farmersalmanac.com for more information about the risks of consuming raw eggs.
