River of No Return Salmon, 4 ways

  Average Prep Time: 15 min  Average Cook Time: 10-25 min  Yields: 2 fillets

Ingredients

Method 1: Bake

  1. Preheat oven to 450 F.

  2. Cut lemon into 4 wedges.

  3. Season salmon with River of No Return, and place skin side down on cedar plank. Alternatively, place salmon on a baking sheet covered with parchment paper.

  4. Bake until salmon is cooked through, about 12-15 minutes. Squeeze 1 wedge of lemon over each filet, serve, and enjoy!

Method 2: Poach

  1. Cut lemon into 4 wedges.

  2. Heat 1/2 cup dry white wine and 1/2 cup water in a large non-stick skillet until simmering.

  3. Meanwhile, season salmon with River of No Return and slide into liquid mixture. 

  4. Bring to a slow boil, reduce to medium heat, and poach until salmon is firm, about 10 minutes. Serve with lemon wedges.

Method 3: Broil

  1. Preheat the oven's broiler; set rack 8 inches below heat source.

  2. Cut lemon into 4 wedges.

  3. Line a baking sheet with parchment paper.

  4. Remove skin from fillets, season both sides with River of No Return, and place on lined sheet. 

  5. Broil 3 minutes per side, until salmon is firm and flakes with a fork. Serve with lemon wedges.

Method 4: Grill

    1. Slice lemon into 1/4 inch-thick slices.

    2. Place soaked cedar plank over direct heat, toasting for 2-3 minutes per side until just smoking.

    3. Remove skin from fillets, season both sides with River of No Return, and place on toasted plank, covering fish with lemon slices.

  1. Cook over indirect heat for 20-25 minutes or until salmon is cooked through.
