My mom gifted me my Instant Pot for Christmas 2015. It's definitely one of the best gifts she's ever given me and gets weekly use. 

Mom first became a pressure cooker user when she and Dad spent a couple of months sailing around the Gulf of Mexico and living on their sailboat. It was one way to have a really delicious home-cooked meal with limited kitchen appliances. Hers was a stovetop model, and she loved it so much, she got me the Instant Pot "before they were cool."

She now has an Instant Pot of her own, and artichokes are one of her favorite veggies. They were always expensive in our Montana town growing up, so when we got to enjoy them, it was a real treat. 

Mom told me that I must try steaming my artichokes in the Instant Pot. It's so much easier and faster than boiling.

Once you add your selection of herbs, garlic, olive oil, and River of No Return Smoky+Sweet+Citrus seasoning, it only takes 10 minutes of high pressure to cook the artichokes versus at least 30 minutes grilling or boiling. Don't get me wrong — you need to account for the time it takes to get the Instant Pot up to pressure, but I love that it's really hands-off cooking time. Once the time's up, simply quick release the pressure by twisting the lid to to the vent position.

We enjoyed our artichokes with Sunday roast chicken on the Traeger. The artichokes were done before the chicken, so it wasn't a big deal to leave them in the Instant Pot on the "keep warm" setting until everything was ready.

Healthy and delicious, fresh artichokes can be ready in just 10 minutes in your Instant Pot. Fresh garlic and our River of No Return Smoky + Sweet + Citrus seasoning blend make them extra complex and tasty.

Prep time: 5 minutes | Cook time: 10 minutes (plus a few minutes to get up to pressure) | Total time: About 20 minutes

Yield: 4 artichokes

Calories per serving: 86 without butter, 122 with butter

Fat per serving: 3g without butter, 7g with butter


Cooking Directions

  1. Remove stem and top 1 inch of artichoke with a sharp knife.
  2. Add water and rack to Instant Pot. Place artichokes on rack, stem side down.
  3. Pour 1/2 tsp olive oil over each artichoke. Divide garlic, herbs, and River of No Return evenly over the tops of the 4 artichokes.
  4. Cook using manual high pressure for 10 minutes. When cook time is up, quick release steam.
  5. Serve with melted butter* mixed with chopped herbs on the side for dipping.

* For a lower-calorie option, try mixing a little melted herbed butter with some warm chicken stock for dipping.
