This spicy roasted butternut squash & bacon soup is seasoned with our Three Kings Smoky+Spicy+Sweet Blend for a delightful sweet, smoky heat… perfect for warming up a wintry day.

Spicy Butternut Squash Soup with Bacon

  • 1 butternut squash (about 3 lbs), seeded, peeled and cut into 1-inch dice
  • 1 onion, diced
  • 4 slices bacon, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Three Kings Smoky+Spicy+Sweet Blend
  • 2 1/2 cups chicken stock
  • Sour cream, optional for garnish
  • Green onions, chopped, optional for garnish


  1. Preheat oven to 400° F. Line a baking sheet with parchment paper.
  2. Place butternut squash, onion, garlic and bacon onto the prepared baking sheet. Season with Three Kings to taste. Spray or toss with olive oil.
  3. Bake for 25-30 minutes, or until squash is tender.
  4. Meanwhile, heat a dutch oven over medium high heat. Add remaining diced bacon and cook until crisp, about 6-8 minutes. Transfer to a paper towel lined plate. Drain all but 1 tablespoon of bacon fat.
  5. Reduce heat to medium. Add baked squash mixture to dutch oven. Season with thyme and Three Kings. Cook until fragrant, about 1-2 minutes.
  6. Stir in chicken stock. Puree with an immersion blender.
  7. Bring soup mixture to a boil. Simmer until thickened, about 5 minutes.
  8. Serve immediately, garnished with cooked bacon, sour cream, and green onion. Enjoy!
