About Abilene Depot

Salt and pepper goes together like, well, salt & pepper. We’ve been using salt and pepper for hundreds of years on everything from an expensive porterhouse steak to our peas and carrots. There’s nothing remotely bold or interesting about salt & pepper.

But guess what? Salt and pepper sells. Day in, day out. It’s the most popular way to season any savory dish. At Caboose Spice & Company, we believe that there’s no shame in using something so simple and accessible as good ol’ salt & pepper. But we also believe that it can be done better.

The “upgrade” in Abilene refers to the use of Pacific Northwest alderwood-smoked sea salt, not iodized salt; and fresh butcher-grind black pepper. But there’s more: we’ve added a hint of fennel seed and coriander for freshness; a dash of organic cocoa powder and chili pepper for warmth and depth. Finally, the flavors of garlic, onion, oregano and parsley along that smoky aroma will remind you of your favorite steakhouse.

The story behind the name: Abilene Depot

We originally developed this blend in our home kitchen as our go-to rub for all things beef: steaks, burgers, ribs, roasts.

We named it after the town Abilene, Kansas: known as the very first “cow town” of the West, home to Marshal “Wild Bill” Hickok, and the end point of the Chisholm trail.

We like to think a little of the Wild West spirit of Abilene lives on in this flavorful blend.
